Couple of things comes to mind, you are bit conflicting and need to decide what directions you would like to go with.
You could build new domain, Install exchange 2010, use same SMTP name space and migrate everything in their including mail. Profiles, network shares, printers, application,
rejoin workstations etc. (If you have 10 to 20 users, with good help you can wrap this up over weekend, working long hours (- : , assuming you are familiar with all these work and not going to discovery or learn things as you do it.
OR
You can install Windows 2008 into existing SBS 2003 as member server, install Exchange 2010 configure it properly make sure mail flows, migrate mailboxes from E03 to E210.
Change your mail flow and disable Exchange services on SBS 2003.
If you have, plans to get rid of from SBS 2003 environment you can also do this. Fist Install windows 2008 Server into existing domain as member server and run DC promo on
it to promote to be second domain controller. Once this is, done configure another Win08 member server and install exchange 2010 on it. Configure exchange 2010 to ( send and receive connectors) change your mail routing to Exchange 2010 and make sure mail flows
in between Exchange 2003 and 2010. Once all good, decommission SBS 2003 and clean up AD ( OUs GPOs etc. migrated over from SBS)

I want to build a new 2008 R2 server with 2010 Exchange Server to take tha place of the old 2003 Exchange.


Problem 1: The old 2003 R2 SBS is the main Domain Controller with 2003 Exchange running on it. I need to get the new 2008 R2 Server with the 2010 Exchange Server up and running before I can take the 2003 Exchange off the main domain controller. The 2003 SBS
will stay in place as the Main Domain Controller.
Problem 2: When I try to install the 2010 Exchange Server on the 2008 R2 server it wants to use the 2003 Exchange as the Main Routing device.....I want to install 2010 Exchange Server and rebuild the E-Mail accounts from the ground up.
Question: How can I install the new software?
