Office defaults to picking up the Windows Short Date, which can be configured in Control Panel > Regional and Language.
You can also do it by using a registry file. I'd paste it here, but it doesn't seem that I can access my clipboard, so...
In the Registry, look in [HKEY_CURRENT_USER\Control Panel\International]
Locale
LocaleName
sCountry
sDate
sLongDate
sShortDate
sTimeFormat
sShortTime
sYearMonth
I highly recommend using the ISO 8601 Date Format "YYYY-MM-DD" for many reasons.
Office applications also enable you to supercede the Windows setting or force the standard.
Excel Custom: YYYY-MM-DD or yyyy-mm-dd
Word Field: YYYY-MM-DD or yyyy-mm-dd
PowerPoint: menu-driven with multiple formats
