Should I install the sccm client on:
Domain Controllers
Servers
Why? What do you use it for on them?

DCM and maintance windows with great patch management is a reason to deploy to servers. Just remember licensing if you deploy to servers.MCITP Server Administrator

Just my 5 cents. I do not see any reason why you don't want to install the Agent on DC's. If you do not have the agent, then you need to come up with another solution for software updates, inventory, software deployment etc. and that makes very littel

What I normally see, is that most customers already have a license agreement that allows them to install the Configmgr agent on Workstation OS but not always on the servers. This fact requires the customer to update their licenses to also include servers.

As Kent said, most customers have the ConfigMGR CAL for workstations but do not have CAL:s for the servers. And I have to agree with Kent that once you have ConfigMGR setup you should consider managing your servers with it, if for nothing else patchmanagement
can be a hassle if you have a large amount of servers.MCITP Server Administrator

Are there separate CAL types for the servers, or do I just need to convert/update existing CALS to be of "Workstation or Server" type CAL?

me too agree with Bechir Gharbi's reply. It's good to have sccm client on DCs and servers. you can inventory them and it really helps whenever you need to install urgent (emergency) patches or when you need to upgrade service packs. Also you
can provide inventory reports/platform compliance reports.
