Just wondering if it would be possible to use this method to capture a data drive (drive e:) which is in essence a partition on my master machine. this partition is a non os partition, just data, config files and such. I am aware that the method I linked to below works great for a simple create wim of an OS partition/drive.

Based on you description, I recommend you use imagex to create Windows image (.wim) file. You could only capture drive e:

 imagex /capture image_path image_file "name" {"description"} {/boot | /check | /compress [type] | /config | /flags "EditionID" | /norpfix | /scroll | /verify}
