Or at least their data. I'm looking through the content databases of SharePoint/MOSS 2007 and don't see anything remotely close. I querried the dbo.alldocs table and a couple others but none of them look remotely close. I'm trying to figure out if I could retrieve forms from backups if I had to.

If you mean the InfoPath form itself, you should be able to find it in "AllDocsStreams" table, "Content" field. Or if you turned on version control on that list, try "AllDocVersions" table, "Content" field. If you mean the data InfoPath stored, it could be anywhere.
