This might be one of a couple things I have seen in this situation:
1. There is a bug that sometimes causes this issue. If you update the description of the list and try again, it may resolve your problem.
2. If you have SharePoint setup to create contacts in AD, have you verified there is not a lingering AD contact with the e-mail address? If so, you may need to delete it so the address is available in AD.JD Wade, MCITP

Hi Teejay,
Its a little unclear from your description but it sounds like your using the same address as used to setup your outgoing email settings in Central Admin. Usually you would use the Listname@YourWebAppName.YourDomainName.com. You can just as easily substitute YourServerName in place of YourWebAppName.

Hi Teejay,
You have discussed a couple of issues, but let me try to walk through the basic installation?
Assumptions > SharePoint Directory Management Service is in use
1. Your incoming email settings are and Use the SharePoint Directory Management Service to create distribution groups and contacts? With default settings
a. Central Administration > Operations > Incoming E-Mail Settings >
i. Enable sites on this server to receive e-mail? > Yes
ii. SMTP mail server for incoming mail: > SharePoint.Domain.com
iii. Use the SharePoint Directory Management Service to create distribution groups and contacts > Yes
iv. Active Directory container where new distribution groups and contacts will be created: OU=?, DC=Domain, DC=COM
v. Accept messages from authenticated users only? Yes
vi. Allow creation of distribution groups from SharePoint sites? Yes
vii. Distribution group request approval settings > Create new distribution group > UnCheck
viii. Delete distribution group > Uncheck Check
ix. E-mail server display address: > SharePoint.Domain.com
x. E-mail drop folder: > c:\inetpub\mailroot\drop
Questions
1. What is the OU where the Contacts are being created?
2. Are your contacts for each list being created in AD?
3. Does the user@sharepoint.domain.com exist in the OU
4. What errors are in the ULS logs for E-MAIL
5. have you turned up logging to verbose
probably the easiest way of resolving the issue prior to getting the feedback requested. Either turn off SharePoint directory management
service and try again or configure the OU and ensure that Contacts are being created for each list..

-Ivan

Here is something that works in 2007 and 2010 through powershell. It will tell you if the address is in use on another list.
#Load SharePoint Asssemblies
[System.reflection.Assembly]::LoadWithPartialName(Microsoft.SharePoint)
$webURL = Read-Host "Please enter the web URL of the server"
$SPWebApp = [Microsoft.SharePoint.Administration.SPWebApplication]::Lookup($webURL)
#create a CSV file
Site,List,E-Mail > EMail-Enabled.csv #Write the Headers in to a text file
#Create foreach loop to enumerate through SharePoint Web Application, Sites, Subsites, and Lists.
foreach ($SPsite in $SPwebApp.Sites) # get the collection of site collections
{
foreach($SPweb in $SPsite.AllWebs) # get the collection of sub sites
{
foreach ($SPList list in $SPweb.Lists)
{
if ( ($splist.CanReceiveEmail) -and ($SPlist.EmailAlias) )
{
# WRITE-HOST E-Mail - $SPList.EmailAlias is configured for the list $SPlist.Title
in $SPweb.Url
$SPweb.Url + , + $SPlist.Title + , + $SPList.EmailAlias >> EMail-Enabled.csv #append
the data
}
}
}
}
