When it comes to securing a SharePoint server, are there any best practice guides that I can follow? With regards to patches, are there SharePoint specific patches that address security vulnerabilities and exploits? Are there any centralized repositories of SharePoint security related information?

Hi, There is actually a very good Technet site with all updates. Usually every two months Microsoft releases cumulative updates (CU). Based on what issue it addresses you may want to apply that to your environment. One thing to know the most recent CU contains all previous hotfixes.
