Can multiple people work on the same excel spreadsheet at the same time with MOSS 2007 like they can with google docs? Any further information on the capabilities would be appreciated.

Probably not the way you are looking for, but you can click the refresh button from within excel to get the latest data updated by someone else. Keep in mind this is if you did not check out the spreadsheet...if you did, then only you can edit it until you check it back in. You could setup an alert on the llbrary to notify you when docs where changed/updated..that way you would know when to click refresh.
