I'm not 100% sure what you mean by active directories - at a guess I think you might mean the number of AD domains that can be associated with a single SSP.
Whilst I am not aware of a limit on the number of import sources (domains in this case) that can be imported to an SSP, there are numerous limitations on users and groups that can be associated to a MOSS farm - and you should bear those in mind regardless
of the number of SSPs you are planning to use.
There is a very useful document on Technet that details the software limitations for the 2007 release of SharePoint at http://technet.microsoft.com/en-us/library/cc262787(office.12).aspx
The following limitations appear relevant to your question:
User profiles: 5 million per farm Users in groups: 2 million per Web site Shared Services Providers (SSPs): 3 per farm

This is one of those "Technically" questions.
One Active Directory domain can be associated for Profile Imports. Other Active Directories can also be associated, but are associated as LDAP sources.
Also, if you choose to not use an LDAP filter to narrow down your users (say, to avoid importing disabled accounts -
http://sharepointsherpa.com/2008/03/14/sharepoint-2007-ldap-user-filters-for-limiting-user-profile-import/) and instead choose a particular OU, know that you cannot choose multiple OUs for the import. You will most likely be back building other LDAP
sources again.
Hope this clears things up,
