The best practice from what I've read in various sources is the following:
For Workstations, use "simple schedule". Simple schedule ensures that your PCs will not all start at the same time (randomizing start times). This minimizes impact on the site server as someone already mentioned above. The other recommendation
is to never make your SW inventory run more than once a week as it is resource intensive on the clients.
For Servers, use "custom schedule". This schedule allows you to cherry pick the exact time/dates to start the inventory. That is exactly what you want as this can be scheduled when the server is not on heavy demand.
Again, all recommendations I've seen is to never set it for more that once a week since it is resource intensive.
