Renaming the SCCM site server
We have installed one SCCM 2007 R2 site server. And we need to change the name of that server. What are the consequences of this? We have not installed any other SCCM site servers/components. We have added some osd and applications but no clients yet.

Renaming a server with ConfigMgr installed on it requires a full reinstallation of ConfigMgr.

Which would likely also require a new site code if I am not mistaken.

Well, I think you could reuse the same site code. You'd have to be sure you've cleaned up AD (and WINS if you used that). Since you don't have any clients, personally I'd just create a new site code anyway. If you had thousands of clients you'd have to reassign, then maybe I would go through thecleanup vs. a new site code.

If you haven't installed any site server role/components on the server yet, I would suggest you to uninstall SCCM, reboot the server then change the server name and reinstalled sccm role on the server.
