You will get all the features of office 2007 when you connect to a 2007 MOSS service, but presented via a limited ribbon in the client. All the features of Sharepoint 2007 should work fine, Office 2010 will essentially operate as office 2007 when you
connect to MOSS - your problems are much more relevant in the client areas.
You might need to do more planning if you use things like Sharepoint Designer with 2007 as 2010 doesn't connect to 2007 services, so you'll need to run both versions at 32bit and get the install and patch order sorted out. Same for Infopath I think,
2010 excel and powerpoint both operate differently. Many of the features of outlook 2010 will simply not be available if you remain on Exchange 2007 for example.
