AFAIK there is no way to uninstall a CU for SharePoint. Sean McDonough provided a good explanation of this over at http://serverfault.com/questions/70440/how-to-remove-a-cumulative-update-from-a-sharepoint-server Essentially, office updates (including MOSS) make changes to database schemes, meaning a roll-back is not possible.
