Is the preview supposed to reboot every few hours?
Just wondering if that is something it is supposed to be doing or not. It keeps me from doing anything really productive with it in terms of testing since it loses all of my work every time it reboots.

No.  It is not supposed to reboot that frequently.  What build are you on currently?  I have heard that really old builds will do that as a "punishment" for not updating.  Don't think punishment is the correct word, but it would almost be a punishment if it were to reboot every couple or few hours. 

Would drive me off a bridge if it did.......

If available, upload us your WindowsUpdate.log (Could be found under %windir%\Windowsupdate.log ), and the Event log mentioned by Team Zigzag using OneDrive, then post the sahred link here.
