Is Microsoft SharePoint 2007 supported with Microsoft SQL Server 2012 64bit?
The reason why is that we would like to move to SQL Server 2012 64bit in the future.

No, SQL Server 2012 is not supported with SharePoint 2007.

Determine hardware and software requirements (Office SharePoint Server):
Office SharePoint Server 2007 does not support SQL Server 2012 or later versions of SQL Server.
