I want to set a date that would pull information for the prior week.

Hi,
Can you please provide more details? The following would give you the first and last day of prior week.
select dateadd(wk, datediff(wk, 0, getdate()) - 1, 0),
dateadd(wk, datediff(wk, 0, getdate()) - 1, 0) + 4
Is that what you want?
