Is it possible to do the IE 11 upgrade via software updates? I googled for a bit and did not get much back apart from package deployments..?

For Windows 7 and Windows Server 2008 R2, yes. It's an Update Rollup released May 13, 2014.

There are pre-requisites though (some of which may not be in the WSUS catalog -- don't know though as I haven't checked them all): https://support.microsoft.com/en-us/kb/2847882

Can confirm what Jason said, not all updates were in the catalog. We were able to successfully import them and deploy via software updates. Works great!
