I am looking for a way to have a column in my view with the name of the user whom approved and published the document. Currently when the document is approved, the SharePoint shows "System Account". I didn't find a way to show the real approver's name instead the "System Account", so I thought a work around which is to create another column with the proper user name which did approve the document to be published.

Did anyone find a way to do it that way?

If i understand correctly, you are using SharePoint Approval Workflow for this purpose. if yes, then you can follow below steps to achieve this-

1.) Create a new Column in doc library.

2.) Create another designer workflow, use workflow action to query associated Task list "Assigned To" column, retriev the value and update in new column.
