How can I change my detection settings on a deployment?

I ran a deployment with the detection method set on the registry. So the installation gave me an error 0x87D00324.

Throughout my search I learned that this error basically states that the detection method is bad even though the app may have installed anyways. 

Is there a way to edit the deployment to change this?

You don't change the detection method on a deployment, you have to change the detection method on the deployment type of the application (tab Detection Method).

Okay, then I know you have to update package if it's a package, but if it's an app do you do anything different?

No, you only have to update the package or application when the content has changed. Configuration changes will arrive on the client during the next policy update.

That's not true. Neither packages nor applications have to be updated if you don't change anything in the source files.

once you have changed your detection rule then once the machine updates it's policy and also runs another application deployment evaluation cycle then it should be detected.

You can do these manually to speed things up via the control panel applet on the device or via right click tools.
