Hi. I also am searching for the information how to create email handler's. This would be useful to fill in custom list fields from an email submitted to SharePoint. Have you found any information about it?

You may want to give this solution http://anurasoftware.com/default.aspx a try. Anura Email Enabled List extends the ability of receiving incoming emails to all types of SharePoint list. Microsoft SharePoint 2007 only allows Document Libraries, Announcement list, Calendar list, Discussion board and Blog list to receive incoming emails. Anura Software helps you to remove this limitation and extends this ability to all your selected lists, such as task list, issue tracking list, and any custom lists. Anura Email Enabled List is a complete email collaboration solution for you organization by saving email metadata including email headers, body and attachments in SharePoint list. Anura Email Enabled List also contains outgoing email features which can send auto-reply confirmation and notification to email senders. This is useful for building a SharePoint based issue tracking system.
