I have some server with more than two NICs, is there a way to force SCOM to use a specific NIC to monitoring?

It will use the windows routing table and result from DNS requests (ip addresses) to establish what NIC to use. Make sure your scom server and agents are know in dns by their production ip address and it will work out fine. If you want to force it to a backup network for instance you will have to force it by forcing the ip address it recognises for a machine (hosts file for instance).
