Does FIM 2010 require Exchange 2010 or 2007?
I am upgrading from ILM to FIM and have read that 2010 or 2007 Exchange is required, we are still a 2003 Exchange shop is there a way valid way around this? Or is my information outdated?

Rick, FIM 2010 supports Exchange Server 2003, 2007 & 2010.

This overview states that FIM 2010 needs to be hosted on a 2010/2007 Exchange Box, I pasted the excerpt out of the article, see NOTE. Does this mean we have to have a 2010 Exchange Box running to be fully functional?

Exchange 2010, Exchange 2007 and Office Outlook 2007 (with the FIM Add-in for Outlook)
In organizations that have deployed at least one server running Exchange 2010 or Exchange 2007 with the mailbox role and the FIM Add-in for Outlook deployed and where approval requests can be approved or rejected directly from Office Outlook 2007
and requests to join or leave groups can be initiated without needing to leave the Office Outlook 2007 experience.
Note
The FIM Web service account’s mailbox must be hosted on the Exchange 2010 or Exchange 2007 server. To take advantage of the Office Outlook 2007 client, the mailboxes where approval and rejection take place must be on Exchange 2007. However,
notifications may be sent to mailboxes on other types of e-mail servers including Exchange 2003 and Lotus Notes.

I assumed you were talking about mailbox provisioning as you are upgrading from ILM to FIM.
If you intend to use approval WF from within FIM, then yes you will need Exchange Server 2007.

I'm not sure if you got this right, but it's not FIM which has to be hosted on a Exchange Box, it's the mailbox of the FIM service account/users.
As MMS_guru states, provisioning of mailboxes will be ok. The copy paste you gave is targetted at the approval from requests. FIM 2010 comes with add-ins for Oulook 2007 (and 2010) which will give the user approve/reject buttons. This is a very neat experience.
I'm not entirely sure about the matrix for this stuff, let me explain:
requirement1: email client is outlook 2007 or 2010 that's for sure. If you don't have this: your users will get emails with links to requests in the portal and then they can click aprove/reject. Will work fine, but not as sexy ofcourse :)
requirement2: the FIM Service account is mail-enabled and it's mailbox is located on Exchange 2007 or 2010
requirement3: the users willing to use the aprove/reject from within outlook also have to be hosted on Exchange 2007 or 2010
I'm pretty sure all 3 requirements have to be in place for the aproval/reject to work from within the outlook UI.

FIM doesn't need Exchange at all but it gives you some nice features when also using the Outlook add-ins that comes with FIM.
Unless you have an Exchange server and if you wish to be able to send notifications and approvals you need an smtp server but then you must edit the FIM email templates for approvals to have a link back to the approval for the approver to follow, if you
use Exchange and Outlook approvals can be handled directly within Outlook.
