I'm getting ready to upgrade our current MOSS/MOPS infrastructure and will be doing a fresh reinstall. I have tested installing the CU packages after SP2 and the versions of Sharepoint point to the update being correct. MY question is do I need to isntall each month of CU's after SP2, or can I just jump to the latest?

You can install the latest CU's and that should install all the preceding CU's.
