Is there any way to pull out statistics like how many people using the dashboards and how many hits like that.

I just want to analyse the usage of the dashboards and reports by business users

You can go to Site Actions > Site Settings > Site Actions

There you will find Web Analytics Report for Site and Site Collection.

You can append this _layouts/WebAnalytics/Report.aspx?t=SummaryReport&l=s after your site in URL too.

From there, you can filter hits on dashboards.
