Copying default profile with unattend.xml and capturing/deploying with SCCM 2012 R2.
I work for a city school district and have been given the task to deploy OS images through the network. We have an SCCM server that is set up how it should be. I created an os image (in audit mode) on a reference computer and ran the sysprep
command with an unattend file using copy profile. I then captured with DISM after shutdown and put the captured image on the SCCM server. I deployed to the distribution point and created a task sequence to deploy. After install, the profiles are gone and only
an admin account I didn't create is on there. Any idea on what I missed?

My suggestion, stop trying to do things manually. Automate the changes you want and never look back. CopyProfile is a terrible, un-documented kludge that is not easy to troubleshoot, use, or repeat. OSD is about automation. Script out the changes you desire
and never have to worry about CopyProfile or manual configuration again.

Would you happen to have an example on this script? Also, what way is preferred to deploy a custom image and keep default user profile settings with sccm? Fairly new to this but I have done plenty of research. Thanks

It really depends upon what you are customizing. See the "A Better Way" section of this blog post to help you get started though:

Many people prefers to use SCCM Build and Capture task sequence to create the base image and customize the image as per your needs using scripts / MDT.
As Jason mentioned it is better to stop applying customization manually and use the SCCM OSD task sequence.
