I am having issues getting Outlook to connect to our Exchange server automatically. I was told by one of our engineers that it should work without any issue, but it's not working. It comes up and asks to create a new profile. In my msp file I have chosen to create a new profile, but did not provide any information to go into that profile.

Are you using the Outlook autodiscover to create the profile automatically (you just enter the display name, email address and password)? If so, then there may be an issue in your DNS configuration for autodiscover.<yourdomain>.com
Try creating the profile manually (where you enter the server name and other information) and see if that works. If it does, then you know something is broken in autodiscover (either in DNS or IIS on the Exchange CAS server(s)).
As far as migrating data goes, Quest Software provides a tool that does an excellent job of migrating data:
