Can I set the sharepoint site to default to a Calendar instead of the "Home" tab?
I would like our Sharepoint site to open to the office calendar, not the "home" tab where only a partial veiw of the calendar is availabe through web parts. Is this possible? We are using 2007.

Yes. Make sure the Publishing feature is on and then you can set the home page (Welcome Page) in the site settings area. Just navigate to the calendar page and copy the URL, open up the welcome page in site settings and paste in the copied URL.
