We have a Discussion Board setup with 5 Categories you can choose from in the Web view of our SP 2013 site.

When we link the Discussion Lists to Outlook, we don't see the Categories to choose from when Posting from Outlook. 

Is it possible to enable this Field in the Outlook Post to the Discussion List so it gets tagged to the right SP Category?

the Sharepoint custom list column schema does not match with the outlook. Hence, you can try doing it other way round. Finding which Oulook field corresponds to Sharepoint custom column. Check the below article for more help
