Approval Workflows Not Sending Email to Some Users - Coercion Warning

We recently upgraded from SharePoint 2010 to 2013.  When testing our approval workflows that were created in 2010, they appeared to work fine, until we realized that some of the users listed in the notification area were not receiving emails from the workflow.  We know the SharePoint 2013 server is sending emails fine, since other users on the workflow received the notification.  I also verified that the users who didn't receive the workflow notification were able to receive emails from the SP server by sharing a site with them.  They all reported back that they had received the message about having access to the site.  I really don't understand why specific users aren't receiving notifications through workflows, but receive emails from the server when granted access to a site.  Any ideas?  Here are some things I've tried:

1. Checking problem user's profiles in the User Profile Service to see if anything was different with their accounts than the users who were receiving workflow notifications - I didn't see a difference.

2. Removing a problem user's profile from the server and running a Full Profile Sync to bring the account back in.  Still the same problem.

3. Verified my Workflow Manager was setup correctly on the Server and all the services were running.

4. Tried creating a new 2010 Approval Workflow to see if the problem might be with the migrated workflows.  Same behavior from a new workflow.

5. One of our admins is currently trying to create a new 2013 workflow through SharePoint Designer 2013 (it's my understanding that SP Designer is the only way to create 2013 workflows?) and we'll test with that as well once she's done.

UPDATE - I forgot to include the error message I'm seeing:  "Coercion warning: user or group does not have a valid e-mail address."  I'm seeing the same message in the logs on the SP2013 server, but nothing else that gives me any additional information.  As I mentioned before, I've checked the users' profiles who aren't receiving workflow emails, and they all have valid email addresses.

That is not the problem I'm experiencing.  We are using a DNS entry and Alternate Access Mappings for our server, so the address is still the same, and mostly all the users in the workflow are receiving an email alert.  The problem is that only a handful of users are not receiving alerts for the workflow via email, and the rest of the users are.  The users who aren't receiving workflow emails are receiving email when someone shares a site with them, so we know they can receive email from the server, but just not as a part of the workflow process for some reason.

Mike I've seen this "Coercion error" before when using the wrong user lookup value in SPD2013 workflows. Make sure where ever you are doing a lookup for a user that the Login Name is used and that when you're referencing a user variable in say the "To" box of an e-mail that you're using the User Email value.

We're currently only using the out-of-the-box 2010 workflows and setting them up through a browser rather than through SharePoint Designer for the most part.  I did end up figuring out how to send email to the individuals who were being removed from the workflow emails - I deleted their accounts from the site collection.  I stumbled across a site yesterday while researching this, but it didn't seem to make sense.  I don't really want to delete the users, but apparently it works.  I'm guessing the people picker goes back to AD and brings the user in again.  The People Picker vs. User Profile Service kind of throws me off a bit.  I'm not sure the difference between the two for the most part.  At least I know how to fix the problem in the future.  Too bad there isn't a way I can figure out which accounts are going to have problems down the line with this particular issue.

Well, the problem is back today.  Some of the users I removed yesterday from the site collection and were working after are now no longer working.  Also, other users who were receiving email yesterday aren't today.  Any ideas of what I can check to resolve this issue?  All the users seem fine when I look at their profiles in the User Profile Search Service.
