I would like to modify the sharing possibility. For example when I share a document, I would like to search in several directories + add process (via a program).

What I have to modifiy (code or Sharepoint config) in order to do that ?

I am not sure I understand your question correctly.

You can pro-grammatically set permissions on files as mentioned in the following link.

Per my understanding, you might want to customize the People Picker when using the share functionality.

Rather than customizing the OOTB share functionality which would require taking the built-in script and design into consideration, it would be more recommended and appropriate to create a custom share solution with the custom process of People Picker.
